The Fall Veggie Garden


There are many early spring veggies you can repeat in the fall. Spinach is one. Lettuce is another. Although, these plants will not survive a frost, they are fast growers and will add to your table.

Veggies that will last through a frost and even a light snow are: Kohlrabi (a kind of cabbage), Kale, Mustard and Collards.

These greens are better harvested after at least one frost as it intensifies their flavor. Always de-vein them as they can be tough the longer they stay in the garden. Early harvests can be sauuted with garlic and olive oil. Later ones need to be boiled for a long time until tender with chicken stick or bacon to give flavor. These plants are very good for you and you should include them in your diet.

Another plant that will take a light frost is Swiss chard. Chop the stalks and saute like cellery. Use the leaves like spinach.

Brocolli and brussel sprouts can also last into an early snow. Root veggies, if grown will keep underground if mulched.
